FOOD TECHNOLOGY LABORATORY
The Food Technology Laboratories are specialized facilities that integrate advanced food testing capabilities with preservation technology research. It conducts comprehensive food quality analyses encompassing nutritional content determination, nutritional labelling in compliance with the Malaysia Food Act 1983, safety testing and sensory evaluation. Equipped with sophisticated instruments such as Fourier Transform Infrared Spectroscopy with Attenuated Total Reflectance (FTIR-ATR) for rapid identification of functional groups in food and chemical components and Gas Chromatography with Flame Ionization Detector (GC-FID) for precise quantification of ethanol quantification, volatile and fatty acid compounds, the laboratory ensures accurate and detailed characterization of food materials. In parallel, the facility advances preservation methods through pilot-scale drying technologies including freeze drying and vacuum tray drying. This amalgamation approach enables continuous quality assessment throughout the preservation process, supporting both industrial applications and research initiatives based on principle “from farm to fork” aimed at developing safer and higher-quality food products.
